Egg & Veggie Scrambles
These are now a family favorite! Especially when I make a Saturday morning breakfast. Egg & Veggie Scrambles are a perfect way to feed a crowd or just a few! This is easy to mix and match and create you very own favorite combo! There truly is no wrong way to do it!
Ingredients to feed 5-6
Cut in half for 2-3 (or enough to have leftovers)
10-12 eggs Or Equivalent measures of Egg Beaters
1/2 c. Milk (or Unsweetened Plain Nut/or Soy Milk)
Kosher Salt & Pepper to taste
Garlic powder to taste (approx. 1/2 t.)
**Couple of dashes of Tabasco or Sriracha Sauce to taste*Optional*
1/2 c. Grated Parmesan, Feta or Shredded Cheese *Optional*
Veggies: Use any combo. The more the merrier!
2 T. Olive or Coconut Oil
Onion (1 medium Diced)
Green Bell Pepper (1 medium Diced)
Small Zucchini (small dice)
Garlic (2-3 Cloves Finely Chopped)
Mushrooms (8 finely chopped)
Tomatoes ( 1 Small (seeded) and chopped)
3 cups Fresh Spinach
Additional Optional Add-ons:
1 cup Bacon or Turkey (Bacon Chopped)
1 cup Canadian Bacon (Small Dice)
1 cup Left-Over Steak (Small Dice)
1 cup Lean Turkey Sausage Crumbles or Chopped Links
Etc.
*These are pretty basic vegetables. Feel free to use whatever and in any combo!
In a medium to large sauteé pan (frying pan), preferably non-stick, place on medium heat. Add oil and vegetables of your choice. Turn down to medium-low, and season to taste. Sauteé vegetables until tender and onions are translucent. Transfer to another bowl and reserve.
In a large bowl add eggs, and seasonings. Whisk well until combined.
Bring pan back up to medium heat. Add additional oil if needed or use a non-stick spray. Place beaten egg mixture in pan and use a rubber spatula to move eggs around pan and scramble. Turn down heat to medium-low. Keep moving the eggs with rubber spatula until thoroughly combined and they are coming together. Once they are at a wet scramble, add sauteéd vegetable mixture and/or prepared meat if you are using any. Continue to stir gently until both are blended together. Turn off heat, and let the eggs coast to finish. At this point you can add the cheese if you so desire to add it to your scrambles.
Finish with fresh chopped parsley if you desire to add some extra color! Enjoy!
Place any leftovers in an air tight container to enjoy another day or use in some breakfast burritos!
