These little gems will soon be your favorite! So easy to make and build. it is worth your time and money to make a bunch of these at once, and FREEZE them. Then they will be ready to reheat quickly for you to take on the go! Or you can make just one yummy one to enjoy!
Ingredients:
*Note*I will be listing ingredients with general directions. These are not something you have to "measure" out. Just wing it, and they will be delish!
Scrambled Eggs
Shredded Cheese (Low-Moisture)
Salsa
Black Beans
*Brown Rice*
6"- 8" Tortilla Wraps
Turkey Bacon
Turkey Sausage Crumbles
Sauteed Onions
Sauteed Peppers
*Extra Toppings*
Spinach
Red Onions
Diced Tomatoes
Avocados
Plain Yogurt
*Southwestern Seasoning*
Smoky Southwest Seasoning Recipe
1 tbsp Chili Powder
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp paprika
1 tsp sea salt
Mix together in a small jar.
Tip: Keep old spice jars to make your own.
As I mentioned, there really are no measurements. This is a basic outline on what you will need to build 1 or 20 burritos. If you are looking to making a dozen or more to be able to freeze. I would use 1 dozen eggs scrambled.
Make sure before you get ALL the ingredients ready, cooked, chopped, and good to rock and roll! Once you are set up, it will be like a production line.
You won't need a lot of filling. a little will go a long way. Roll them up and wrap in waxed paper and then in foil. The waxed paper will give you a great little wrapper to be able to reheat it in. The foil will ensure freshness in the freezer. Once all wrapped in foil, place in them all in a large freezer bag. That too will ensure freshness. They will last up to 3-4 months in the freezer. However, because of their yumminess, they won't last that long!
If you are making fresh or have reheated one. Think about adding some fresh veggies to it. It is absolutely delicious, and a great way to get some veggies in your body in the morning. But don't be fooled! These little bad boys make terrific snacks too! Nothing like a protein packed punch in the mid-morning or afternoon to get you charged!
I have also included the Smoky Southwestern Seasoning recipe below. It is an amazing spice blend from the 21 Day Fix. Use it here on your cooked veggies, or meats. Also, use it any other time on chicken and fish. You will be hooked, and wonder where it's been your whole life! I didn't have coriander, so I left it out, and it's still delish!
